意式茄丁醬配薄荷和歐芹

Ingredients
  • 2 eggplants
  • 2 teaspoons salt
  • 2 tablespoons peanut oil
  • 1 onion, cut into rings
  • 2 sticks of celery, finely chopped
  • 1 clove of garlic
  • 6 peeled, deseeded tomatoes (or a 400 g tin of tomatoes)
  • 1 tablespoon brown sugar
  • 2 tablespoons balsamic vinegar
  • 50g/1.7 oz raisins
  • 2 tablespoons capers
  • 50g/1.7 oz green olives, finely chopped
  • Salt and pepper
  • 1 bunch flat-leaved parsley, coarsely chopped
  • 1 bunch fresh mint, coarsely chopped
Preparation

將茄子切成 2 釐米的茄丁。撒上鹽並放置約 30 分鐘,讓鹽吸收茄子的水分。沖洗茄子,並用紙巾擦乾。在煎鍋中熱 1 湯匙花生油。將洋蔥、芹菜和蒜炒至透明狀。加入粗切的番茄並收汁 5 分鐘。加入糖、義大利香醋、葡萄乾、酸豆和橄欖。再燉 5 分鐘。在另一口鍋中熱 1 湯匙花生油,將茄丁翻炒 5 分鐘至金黃色。將茄丁放入番茄醬中,並放回鍋中燉。用鹽和胡椒調味。將平葉歐芹和薄荷拌入意式茄丁醬後享用。冷熱皆美味!
